Ingredients for Sevaiya
- Vermicelli: 800 Grams
- Milk: 2 Liters
- Sugar: 8 Tablespoon
- Ghee/Clarified Butter: 2 Tablespoons
- Roasted Unsalted Almonds: 8 pices
How to make Kheer Sevaiya: The Sevaiya Recipe
To make a Sevaiya, you need to geat up some ghee, fry some Vermicelli and boil some milk on top of it till it’s thick. Coincidentally this will also give this dish a Kheer-like texture and taste. So this dish is also called Kheer Sevaiya and Doodh Sevaiya as well.
Total Time: 20 minutes
Step 1: Fry the Vermicelli
– Melt some ghee in a pan
– Dry Vermicelli till golden brown in color
Step 2: Boil the Milk
– Add in the milk
– Bring the milk to boil at medium heat
– Add in the sugar
– Let it simmer for 8 to 10 minutes
Step 3: Garnish and Serve
– Garnish with chopped almonds
– Serve on a Bowl

Since the texture of this dish is similar to Kheer this recipe can also be called Kheer Sevaiya Recipe or Doodh Sevaiya Recipe. But since Vermicelli is made from rice flour, the taste between a Kheer and Sevaiya is quite similar but at the same time, enough subtle differences do exist to make someone prefer one or another.
Another subtle feature of this dish is that, unlike some other dishes, this one can be served both hot and cold. While the taste does vary a bit between temperatures, the overall sweetness remains the same.
