Ingredients for Masala
- Coriander : 10 Gram
- Mint: 10 gram
- Ginger: 5 Gram
- Garlic: 2 Cloves
- Chilly: 10 Gram or 2 Pices
- Cardamom: 2 Pods
- Cinammon: 8-10 Grams
- Clove: 5 Pices
- Fennel: 1 teaspoon
- Water: 30 Milileter
Ingridents for Pulau
- Ghee: 2 tablespoon
- Cumin: 1 Teaspoon
- Bay Leaf: 1 Piece
- Cinnamon: 8-10 Grams
- Cardamom: 2 Pods
- Cloves: 3 pices
- Pepper: 1/2 teaspoon
- Cashew: 10 Grams
- Onion: 100 Grams
- Tomato: 50-80 Grams
- Beans: 25 Grams
- Cubed Capsicum: 50 Grams
- Peas: 20 Grams
- Cubed Carrot: 80 Grams
- Cubed Potato: 100 Grams
- Salt: 1 tablespoon
- Water: 500 Milileter
- Basmati Rice: 200 Gram
Note* This recipe is intended for 4 servings with each portion containing 50 Grams of riCe before it is cooked. The output volume will change with the addition of ingredients.
Recipe for Vegetable Pulau: Method of Making
As we mentioned, the Recipe for Vegetable Pulao is more complicated than it looks. The whole process can be divided into three phases: Making the masala, Adding in the Vegetables, and Adding in the Rice. While this does take some work, the end result is worth the effort as you can eat this dish for lunch or dinner.
Total Time: 1 hour
Phase 1: Making the Masala
– Grind Coriander, Mint, Ginger, Garlic, Chilli, Cardamom, Cinnamon, Cloves, and Fennel from Ingredients of Masala
– Add Water
– Blend till smooth
Phase 2: Cooking the Vegetables
– Melt the Ghee
– Add cumin, Bay Leag, Cinnamon, Cardamom, Cloves, pepper, and Cashew
– Saute on low flame for 5 minutes
– Add onion and saute till light brown in color
– Add tomato
– Saute till tomato gets plushy
– Add 5 beans, capsicum, peas, carrot, and potato
– Saute for 5 minutes
– Add the masala along with salt
– Mix well
Phase 3: Adding in the Rice
– Add 500 Milileters of water
– Bring the water to boil after giving a gentle stir
– Add Rice
(before adding in the rice, be sure to soak the rice for at least 20 minutes)
– Mix well
– Simmer in low heat for 30 minutes
– Serve on a hot plate
