Ingredients to make Aloo Ko Achar
- Potato: 800 Grams
- Cucumber: 400 grams
- Carrot: 100 Grams
- Green Chilli: 7 to 8 Pices
- Salt: 8 Teaspoon
- Red Chilli Powder: 8 Teaspoon
- Garlic Ginger Paste: 8 Tablespoon
- Roasted Brown Sesame Powder: 2 Cups
- Fenugreek Seeds: 4 Tablespoon
- Oil: 2 Cups
- Turmeric Powder: 4 Teaspoon
- Lime: 2 Pices
How to make Aloo Ko Achar
This is basically the aloo ko achar with cucumber. For this recipe of aloo ko achar, all you need to do is, boil the potato and mix it in with the spices. While there are indeed a lot of herbs and spices involved, the making process is rather simple.
Total Time: 45 minutes
Step 1: Boil the Potato
– Boil the potatoes for 30 mins
– Peel the potatoes
– Let them cool
Step 2: Preparing the Add-ons
– Chop the Carrot
– Remove the inside of Cucumber
– Chop the cucumber
– Slice the Green Chillis
– Mix them in the bowl
– Heat some oil
– Fry the fenugreek Seeds
Step 3: Cut and Mix
– Cut the Peeled Potatoes into bite-sized pieces
– Put it into the bowl with the addons
– Add salt, garlic ginger paste, red chili powder, and sesame seed powder
– Add in the lime juice
– Mix them well
– Add fried fenugreek powder on top
While making this recipe, you can skip the carrots, cucumber, and lime. If you do this, you will make the classic Newari Aloo ko Achar. On the other hand, you can add Raddish to this mix as well. It will not change the overall process of this dish but give that extra tang to this dish.
