Vegetable Soup: 3 Steps To Reliable and Simple Soup
Vegetable soup is the most basic yet most reliable of soups. Why do you ask? Well, it is because we may not have meats or mushrooms, but we will always have vegetables around us. Along with this, it is a rather simple soup to make.
Being on the same level as mushroom soup for comfort soups, this soup is a healthy one as well. You get all the warmth and nutrients from the veggies with the bonus of a great taste.
On top of this, you get the creative freedom of adding whatever veggies you like as long as you don’t push it too far. With this being said, let’s move on to the recipe, shall we?
Ingredients of Vegetable Soup
- 6 teaspoon oil
- 6 Clove garlic (finely chopped)
- 20 Gram ginger (finely chopped)
- 4 Tablespoon spring onion (chopped)
- 40 Carrot (finely chopped)
- 10 Gram Beans (finely chopped)
- 1 Capsicum (finely chopped)
- 4 Tablespoon cabbage (finely chopped)
- 4 Tablespoon peas
- 4 Tablespoon sweet corn
- 8 Cups of water
- 1.5 Teaspoon salt
- 2 Tablespoon vinegar
- 1 Teaspoon mixed herbs
- 1 Teaspoon chili flakes
- 1 Teaspoon pepper powder
- 4 Tablespoon spring onion (chopped)
This recipe is for 4 portions with 200 Milliliter per serving
How to make a Vegetable Soup
To make a vegetable soup, you have to chop the vegetables and boil them along with spices while adding cornflour to thicken the soup. Although it is not recommended, you can skip the cornflour to make the soup thinner and runnier.
Total Time 30 minutes
Step 1 Prepare and Boil
– In a large Pan heat 3 teaspoon oil
– Saute 3 clove garlic, 10 Grams ginger, and 2 tablespoon spring onion.
– Add 1 carrot, 5 beans, half capsicum, and stir fry for a minute.
– Also add 2 tbsp cabbage, 2 tbsp peas, 2 tbsp sweet corn, and saute slightly.
– Now add 4 cups of water and 1 teaspoon of salt. mix well.
– Cover and boil for 5 minutes or until vegetables are cooked well
Step 2 Add the Spices and Mix
– In a small bowl take 1 teaspoon cornflour and half a cup water.
– Mix well making sure there are no lumps.
– Pour the corn flour slurry and boil for 3-4 minutes or until soup thickens.
– Add 1 tablespoon vinegar, Half teaspoon mixed herbs, half teaspoon chili flakes, and half teaspoon pepper powder.
Step 3 Garnish and Serve
– Mix well making sure the spices are well combined.
– Top with 2 tablespoon spring onion and enjoy vegetable soup.
Final Thoughts
Before we go we do have to remind you that the best temperature to make a vegetable soup is on medium heat. By making the soup in medium heat or around 72 °C, you will get the best of both the flavor and nutrients from the soup. Also for soups, use stock whenever you can. You can buy powdered chicken stocks in malls around Nepal in the grocery section or you can make them on your own.
