Technically speaking Man Choila is not a Choila. The term Choila is a short form of the term “Chuyataagu Laa” which means “Roasted Meat“. Man Choila on the other hand is not roasted but instead boiled. Now, why is a boiled meat dish named after a roasted meat dish? It’s up for debate but no one can deny the deliciousness of this dish.
This tender, spicy and juicy meat dish is one of the most commonly used meat dishes of the Newari People and you can find this almost everywhere. The reason for its popularity can be due to its recipe which is really easy to make and gives is that authentic Newari feeling even if it is not made by a Newari – if done right. Ingredients for Man Choila
- 500 grams buffalo meat
- 5/6 pieces dried chilly
- 50 grams tomato
- 20 grams green garlic
- 50 milileter mustard oil
- 10 grams coriander
- 1 tablespoon salt
- 1.5 teaspoon (optional) chilly
- 1 tablespoon cumin
- 10 cloves garlic
- 20 grams ginger
- 20 grams fenugreek
- 5 grams clove

How to Make a Man Choila In 4 Simple Steps
To makes a man Choila you have to boil meat, then prepare a mix of spices, and then mix them together. This is the gist of the whole recipe. Just like how it sounds, it really is an easy dish to make. Also while the classic dish is made from Buffalo Meat, you can use the meat of any form of red meat for this dish. Also, it is best if the meat doesn’t have any skins attached to them but if you have any, it is not really a big concern.

Step 1: Boil The Meat
– Take a pot, add half a tablespoon of cumin into the water.
– Add half a tablespoon of salt into the water and boil the meat in the water for 40 mins at medium heat.
– After the meat is boiled, take it off the heat and let it cool down.
Step 2: Prepare the Spices
– Fry some dried chilly and grind it with 5 grams of clove and 5 cloves of garlic to make a paste.
– Chop some green garlic, ginger, and the remaining garlic.
– Roast some tomato and slice them as well.
Step 3: Cut the Meat
– Cut the meat into medium-sized chunks.
Remember not to cut the meat too thin nor too thick. One of the enjoyments of Choila and its variants including Man Choila comes from the activity of Chewing the Meat.
Step 4: Add the Spices add the Fenugreek Tadhka
– Add in the spices that you have prepared before
– Drip a bit of oil, and mix the oil.
– Heat up the oil in a small pan and drop in the fenugreek before adding them into the mix.
Man Choila is one of the many variants of Choila. The name of this dish is a short form of “manaatagu Choila” where “manaatagu” is the literal translation for “Boiled“. So the name means Boiled Choila. This simple dish is one of the most common and easy to make the dish in the Newari Cuisine.
Along with this, since this dish is meant to be hot and spicy, if you want you can add Chilly powder or chilly flakes as you desire. Man Choila is one of the most common snacks during a party and goes well with Rice Beer also known as Chhyang or Thwon in local Languages. Along with this, it is also used as a substitute for Haku Choila when it is not available as it is easier and faster to prepare as not everyone has access to Wheat Straw – one of the important things to make a Choila.
